Gajar ka Halwa
(Carrot Pudding)

Ingredients

- 4 cups grated carrots
- 2 tbsp ghee
- 2 cups whole milk
- ½ cup sugar (adjust to taste)
- ¼ tsp cardamom powder
- 2 tbsp chopped nuts (cashews, almonds)
- 1 tbsp raisins (optional)
Description
A warm Indian dessert made with grated carrots, milk, sugar, and ghee, slow-cooked until rich and fragrant. Often garnished with nuts and cardamom.
Preparation
- Prep Time: 15 mins Cook Time: 45 mins Total Time: 1 hour
- Sauté Carrots: Heat ghee in a pan. Add grated carrots and sauté for 5–7 minutes until slightly soft.
- Cook with Milk: Pour in milk and simmer on low heat, stirring occasionally, until milk is absorbed (20–25 mins).
- Sweeten & Flavor: Add sugar, cardamom powder, and raisins. Cook for another 10–15 minutes until mixture thickens.
- Garnish & Serve: Stir in chopped nuts. Serve warm or chilled.
Tips:
Use full-fat milk for richer flavor.
For a shortcut, substitute condensed milk and reduce sugar.
Garnish with silver leaf or extra nuts for festive flair.
