(Carrot Pudding)

Ingredients

  • 4 cups grated carrots
  • 2 tbsp ghee
  • 2 cups whole milk
  • ½ cup sugar (adjust to taste)
  • ¼ tsp cardamom powder
  • 2 tbsp chopped nuts (cashews, almonds)
  • 1 tbsp raisins (optional)

Description

A warm Indian dessert made with grated carrots, milk, sugar, and ghee, slow-cooked until rich and fragrant. Often garnished with nuts and cardamom.

Preparation

  1. Prep Time: 15 mins  Cook Time: 45 mins  Total Time: 1 hour
  2. Sauté Carrots: Heat ghee in a pan. Add grated carrots and sauté for 5–7 minutes until slightly soft.
  3. Cook with Milk: Pour in milk and simmer on low heat, stirring occasionally, until milk is absorbed (20–25 mins).
  4. Sweeten & Flavor: Add sugar, cardamom powder, and raisins. Cook for another 10–15 minutes until mixture thickens.
  5. Garnish & Serve: Stir in chopped nuts. Serve warm or chilled.


Tips
:

Use full-fat milk for richer flavor.

For a shortcut, substitute condensed milk and reduce sugar.

Garnish with silver leaf or extra nuts for festive flair.
