Ingredients

4 cups new potatoes

2 cups new carrots

2 cups yellow beans

2 cups green beans

1 cup fresh peas

3 cups whole milk (3.25% m.f.)

1 1/2 cups cream blend (10% m.f.)

3/4 cup butter

1 tsp black pepper

Description

 This traditional local dish is a delightful way to incorporate fresh seasonal ingredients for a simple-to-make but delicious one-pot meal. This recipe combines beans, carrots and peas, but the beauty of the dish is its ability to adapt to what’s fresh and seasonal.

Preparation

  1. Prepare all your vegetables and place in individual bowls. Small potatoes should be cut in half. Cut carrots into 1 inch chunks. Trim the tips of the green and yellow beans and then cut in half. Shell 1 cup of peas.
  2. Boil the carrots and potatoes together in big pot of water. Bring to boil (about 10 mins) when ALMOST cooked, add yellow beans and green beans (cook about 5 mins), then add peas at the end (cook 1 minute). Drain water from pot.
  3. To make the delicious broth:
  4. Add milk, blend and butter to the pot with the vegetables. Make sure there is enough broth to cover the veggies
  5. Add black pepper to taste.
  6. Heat broth on low-medium heat, until dairy is hot and butter is melted (but do not boil), gently stir and serve.
