Description
This traditional local dish is a delightful way to incorporate fresh seasonal ingredients for a simple-to-make but delicious one-pot meal. This recipe combines beans, carrots and peas, but the beauty of the dish is its ability to adapt to what’s fresh and seasonal.
Preparation
- Prepare all your vegetables and place in individual bowls. Small potatoes should be cut in half. Cut carrots into 1 inch chunks. Trim the tips of the green and yellow beans and then cut in half. Shell 1 cup of peas.
- Boil the carrots and potatoes together in big pot of water. Bring to boil (about 10 mins) when ALMOST cooked, add yellow beans and green beans (cook about 5 mins), then add peas at the end (cook 1 minute). Drain water from pot.
- To make the delicious broth:
- Add milk, blend and butter to the pot with the vegetables. Make sure there is enough broth to cover the veggies
- Add black pepper to taste.
- Heat broth on low-medium heat, until dairy is hot and butter is melted (but do not boil), gently stir and serve.
